Oatmeal Flax Partridgeberry Muffins

3/4 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1 1/2 tbsp flax meal
1/2 tsp salt
1/2 cup rolled oats
1/2 cup milk + 1 tsp lemon juice mixed in, and allow to sit
1 1/2 tbsp butter, melted
1 egg
1/2 cup dark brown sugar
1/2 tsp vanilla
1/2 cup partridgeberries

Topping:
1 tbsp cold butter
3 tbsp flour
1 tbsp dark brown sugar
1/4 cup powdered sugar
1/2 tbsp milk

Preheat oven to 375°F and line muffin tins with paper liners. Sift together flour, baking soda, baking powder, flax meal and salt, and set aside. Combine oats and milk mixture, and allow to soak 15-20 minutes. To oat mixture add melted butter, egg, brown sugar and vanilla. Add to flour mixture and stir until just combined. Fold in berries. In another bowl, mix all the topping ingredients together and rub between your fingers until you get a texture like fine bread crumbs. Scoop the muffin batter into prepared muffin tins, top with some of the crumb mixture and bake for about 15 minutes. Muffins are done when a toothpick inserted in the centre comes out clean. Makes 6 muffins.
