Muffin Meat Loaves with Mashed Potatoes

1/2 cup non-fat milk
3/4 cup oats
1 lb lean ground beef
3 tbsp chopped onion
1/2 tsp salt
1/2 cup grated cheese
6 potatoes, cooked and mashed

Preheat oven to 350°F. Combine all ingredients, except potatoes, and mix well. (Note: Don’t over-mix; too much mixing can make muffins tough.) Spoon mixture into greased muffin cups. Bake for 30 min., or until temperature in centre of muffin is 160°F. Cool slightly before removing from muffin cups. Serve with mashed potatoes. (Serves 6)
