Slow Cooker Chicken Stew
1/4 cup flour
1/2 tsp each of salt and pepper
1 carton sodium-reduced chicken broth
1 tsp Worcestershire sauce
1 bay leaf
1 tsp paprika
1 bag baby carrots
2 med. onions, diced
3 potatoes, diced
1 (8-oz) can corn kernels, drained
1 pkg (2 cups) broad egg noodles
1 tbsp cornstarch (optional)
Place chicken in slow cooker. Mix flour, salt and pepper, and sprinkle over chicken. Stir to coat chicken. Add remaining ingredients, except the noodles and cornstarch. Stir all ingredients and mix well. Cover and cook in slow cooker on low for 10 – 12 hours or on high for 4 – 6 hours. During the last hour of cooking, add noodles. For thicker juices, at this stage you can also mix cornstarch with a bit of water and stir it into the stew. Stir stew thoroughly before serving.
Cost to make: $9.78 ($2.44 per serving)
