Macaroni & Cheese

Difficulty: easy Prep Time: Fifteen Minutes Total Time: Under an hour
2 cups elbow macaroni, boiled
3 tbsp butter
3 tbsp flour
3 1/2 cups milk, hot
2 dashes Tabasco
2 dashes Worcestershire sauce
1/4 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 cups shredded cheddar cheese

Preheat oven to 350°F. Melt butter and add flour, stirring to make a roux (smooth paste). Add all the sauces, spices and flavourings to the milk and add to the roux a little at a time, constantly stirring to avoid lumps. Cook for 3-5 minutes until thickened. Add cheddar (saving about a handful of the cheese), stirring constantly. Stir in macaroni, then transfer to a greased casserole dish. Top with remaining cheese – and breadcrumbs, if desired. Bake for 20-30 minutes, until the top is golden and sauce starts to bubble up around the edges.
