Cabbage Rolls – Holishkes

8-10 leaves of cabbage
Sauce:
1 (16 oz) can tomato sauce
1/2 cup lemon juice
1 cup brown sugar
Filling:
1 lb ground beef
1/2 cup matzah meal (or finely ground Saltines)
1 large onion, grated
2 carrots, grated
1/2 tsp garlic powder
1/2 cup minced parsley
2 eggs
Sauce:

Filling:

Gently peel away cabbage leaves. Boil leaves briefly to make them soft enough to roll. Combine sauce ingredients in a saucepan and simmer, stirring, until sugar dissolves. Pour 1/4 of sauce into bottom of casserole dish. Combine filling ingredients. Ball up handful of filling and roll in leaf from soft end to spiny end. Lay in dish; repeat with rest of filling. Cover rolls with rest of sauce. Bake at 350°F for 30 min.
