Fish-in-a-Dish

1 lb fresh or frozen fish fillet
1 onion, sliced
1 cup cheese, grated
2 cups carrots, thinly sliced
4 potatoes, thinly sliced
2 tsp margarine
4 tsp lemon juice
1/4 tsp dried parsley
1/4 tsp salt and pepper

Cut fish in four equal servings. Lightly grease a 2.8-litre casserole dish; place fish in the centre of casserole dish. Spread onion evenly over the fish and cover with cheese; then add layer of vegetables. Dot margarine over vegetables. Sprinkle with lemon juice, parsley, salt and pepper. Cover casserole; bake at 400°F for 40 to 45 min., or until fish is cooked and potatoes are tender.
