Chocolate Cream Cookies
2 large eggs
1/2 cup butter, melted
1/2 tsp vanilla
2 1/4 cups flour
6 tbsp cocoa
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp salt
Filling:
1/4 cup butter, softened
1 1/4 cups icing sugar
2 tbsp skim evaporated milk
1/4 tsp vanilla
1/16 tsp salt
yellow food colouring
Preheat oven to 375F. Beat sugar, eggs, butter and vanilla in bowl. In a separate bowl, mix flour, cocoa, cream of tartar, baking soda and salt. Add to wet ingredients. Roll into
1 1/2 inch balls and place on greased baking sheet. Flatten with bottom of a glass. Bake for 10 min. Cool.
Filling: Beat all ingredients together adding more or less icing sugar and milk for spreading consistency. Add food colouring to get a pleasing yellow colour. Spread on cookies and sandwich together. Makes 20 filled cookies.
