Bison with Red Cabbage
Bold-flavoured BBQ sauce
6 slices raw bacon, diced
1 tbsp olive oil
2 cups red cabbage, shaved
1 small onion, shaved
1/2 tsp garlic, minced
2 tbsp red wine vinegar
2 tsp brown sugar
1 large potato
2 tbsp sour cream
2 tsp butter
Rub bison with oil and grill quickly, just searing the outsides. Remove from grill, brush with a bold-flavoured BBQ sauce and place in 325°F oven for 10-15 minutes. Remove from oven, let sit for 3-4 minutes, then slice. Cook bacon on medium heat until most of the fat has been rendered out; add 1 tbsp oil. Once oil is hot, add cabbage and cook for 2-3 minutes. Add onion and garlic; continue cooking until cabbage is tender. Add vinegar and stir quickly. Stir in sugar. Remove from heat. Peel and boil potato until tender. Mash potato and whip with sour cream and butter until fluffy.
