Apple Spice Bars

2 cups flour
3/4 tsp cinnamon
1/2 tsp allspice
1/4 tsp nutmeg
1/8 tsp ginger
1/8 tsp cardamom
2 tsp baking powder
1/2 tsp salt
2 cups brown sugar, packed
1/2 cup butter/margarine, room temperature
2 eggs
1 tsp vanilla
1 1/2 cups Granny Smith apples, peeled & diced
1/2 cup golden raisins
1/4 cup chopped walnuts/pecans

Preheat oven to 350°F. Sift together flour, spices, baking powder and salt. In a larger bowl, cream together butter and brown sugar. Add eggs one at a time, scraping the bowl with a spatula after each addition. Add van-illa and blend until smooth. Add dry ingredients and mix until just incorporated. Fold in fruit and nuts. Spray a 9” x 13” pan with non-stick spray and lightly dust with flour. Pour in batter. Bake for 30-35 minutes, or until a toothpick inserted comes out clean. Allow to cool in pan completely before cutting into squares. Dust with icing sugar, if desired. Yields 12 squares.
