Apple-Cinnamon Quinoa Cereal
1 tbsp butter, divided
2 medium apples, peeled and chopped
1 1/2 cups cold water
1 tsp cinnamon
1/2 tsp pumpkin pie/apple pie spice
3 tbsp packed brown sugar
1/4 cup milk
Soak uncooked quinoa in a bowl of water (enough to cover) for 5 minutes. Heat a large skillet and melt half the butter; add the apples. Cook for 5-10 minutes, until apples are soft and begin to caramelize. Rinse and drain quinoa. Add quinoa to a pot with the 1 1/2 cups water and bring to a boil over medium-high heat. Boil for one minute, then reduce heat to low and cover pan tightly; simmer for 10 minutes. When quinoa is cooked, fluff with a fork and stir in other half of butter and remaining ingredients. Yields 4 servings.
