Apple Chips
1 cup sugar
1 cup water
Preheat oven to 350°F. Place a wire rack on a cookie sheet and spray the rack lightly with non-stick cooking spray. Cut apple in very thin slices (1/16 inch – if you have a mandolin, this will be a little easier). Remove any seeds that you see as you cut. Mix the water and sugar in a pot and bring to a boil. Add apple slices and cook (stirring frequently) for about 5-10 minutes, or until the slices are translucent and the sugar mixture is becoming syrupy. Using tongs, transfer slices to wire rack and place in oven for 15-20 minutes. Apples will start to become slightly golden. Remove apples from the oven and allow to cool for about one minute. Transfer them to a lightly sprayed sheet of wax paper to finish cooling. They will still be soft at first, but will become crisp in about 10 minutes. Yields 1 serving of chips.
