Apple Crisp

Filling:
8 cups Granny Smith apples, peeled, cored and sliced
3/4 cup dark brown sugar
1 tbsp cornstarch
1 tsp ground cinnamon
1/4 tsp nutmeg
1/2 cup lemon juice
Crumble Topping:
1 1/4 cups rolled oats
3/4 cup flour
1 cup dark brown sugar, packed
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup butter/margarine, melted

Crumble Topping:

1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup butter/margarine, melted
Preheat oven to 350°F. Spray a 9" x 13" pan with non-stick cooking spray. Filling: Mix dry ingredients together; add apples. Let sit 5 minutes, then add juice. Pour into prepared pan. Topping: Combine dry ingredients; add melted butter/margarine. Mix until the liquid is incorporated. Crumble the mixture evenly over apples. Bake for about 45 minutes, or until the top is crisp and the filling is bubbling.
