Stained Glass Cookies

1/3 cup butter (or margarine)
1/3 cup sugar
1 egg
2/3 cup honey
1/2 tsp vanilla extract
3 cups flour
3/4 tsp baking soda
1/4 tsp salt
30 hard candies, various clear colours
Large and small cookie cutters

Preheat oven to 375°F. Cream the butter and sugar; mix in the egg, honey and vanilla. Sift flour, salt and baking soda together; add to the wet mixture. Mix until smooth dough forms. Separate candies by colour and place each colour in a separate plastic bag. Use a hammer to crush the candies (don’t mix the colours!). Line two large baking pans with parchment paper; roll dough out a little over 1/8-inch thick and cut out desired shapes of cookies with the larger cutters. Using a smaller cookie cutter, cut out the middle of the cookies. Place cookies on paper and bake at 375°F for 5 minutes (until lightly golden). Remove from oven and fill the areas that you had cut out in advance with crushed candies. Return cookies to oven and bake at 375°F for 3-5 more minutes (until the candies are melted) and cool; carefully peel cookies off paper. Store in an airtight container.
