Spicy Sweet Potato Soup

1 cup sour cream
1 tbsp grated lime zest
2 tbsp extra virgin olive oil
2 tbsp butter
2 cups onion, diced
8 cloves garlic, minced
5 tbsp fresh ginger, grated
2 tsp cumin
2 tbsp sambal (Southeast Asian hot sauce)
1 tbsp crushed chili pepper flakes
5 large sweet potatoes, peeled and diced
14 cups chicken stock
1 cup smooth peanut butter
4 limes, juiced
5 Roma tomatoes, chopped
1/4 cup fresh cilantro, chopped

Mix together the sour cream and zest. Set aside in the fridge for at least an hour. Melt the butter and oil in a large pot over medium heat. Add onion, garlic and ginger. Cook for about 3 minutes. Add cumin, sambal and chili flakes. Add sweet potatoes and chicken stock. Bring to a boil and reduce the heat. Simmer until the potatoes are tender (about 15 minutes). Whisk in the peanut butter. Once it's melted, puree the soup and add the lime juice, tomatoes and cilantro. Serve with a dollop of the lime sour cream on top. Yield: approx. 12 servings
