Spicy Lamb Stew
1 lime, juiced
1 green bell pepper
2 cloves garlic, chopped
1 cup onion, chopped
1 1/2 tsp fresh cilantro, chopped
1 fresh jalapeño, chopped
1 1/2 tsp olive oil
1 1/2 tsp white sugar
1 1/2 cups water, divided
2 tomatoes, chopped
1/2 tsp oregano flakes
1/4 cup tomato paste
In a blender, process the lime juice, bell pepper, garlic, onion, cilantro and jalapeño until smooth. Marinate the meat in this mixture overnight in the refrigerator. Take the meat out and reserve the marinade. Heat the oil over medium-high heat in a large pan and add the sugar. Once it starts to turn an amber colour, add the meat and brown on all sides. Add the reserved marinade and 1/2 cup water. Cover and simmer until the liquid is nearly all gone and the meat is tender. Add the tomatoes, oregano and tomato paste. Mix well. Add remaining 1 cup of water and simmer until the liquid is reduced to a thin sauce. Serve with your favourite rice. Yield: 4-6 servings.
