Swiss Fondue

8 oz Gruyere, grated
8 oz Swiss cheese, grated
2 tbsp all-purpose flour
3/4 tsp dry mustard
1 cup dry white wine (if using cooking wine, omit the salt below)
1/4 tsp salt
1/4 tsp ground nutmeg
Assorted breads (your favourite kinds), cut into 1" cubes

Toss together the cheeses, flour and dry mustard. Simmer the wine in a pot. Add flour-coated cheese in quarters, stirring well in a "figure 8" motion after each addition. When all the cheese has melted, stir in salt (if using) and nutmeg. Transfer the fondue to a fondue pot for holding/serving. Serve with bread cubes. Yield: 2-4 servings.
