Baked Portobello with Blue Cheese

1/4 cup butter
1 tbsp extra virgin olive oil
1/2 cup shallots, small dice
1 tbsp fresh garlic, minced
8 portobello mushroom caps, halved and sliced 1/4” thick
1 tsp fresh thyme
1/4 cup white wine
Salt and pepper
1 cup blue cheese, crumbled

Preheat oven to 375 degrees Fahrenheit. Melt butter and oil together in a frying pan over medium-high heat. Add the shallots and garlic. Saute until shallots are translucent. Add mushrooms and thyme, and saute until the mushrooms soften and the liquid they give off has evaporated. Turn the heat to high and, once the pan is sizzling, add the wine. Cook until most of the wine has evaporated. Remove from heat. Season to taste with salt and pepper, and transfer the mixture to an ungreased baking dish. Sprinkle blue cheese over the top and bake for about 15 minutes. Yield: 4 servings.
