Frittata

Difficulty: easy Prep Time: Five Minutes Total Time: Under an hour
2 tbsp butter
2 strips bacon, sliced very thinly (matchstick size)
1 cup fresh veggies, small dice (bell peppers, green onion, red onion, celery, mushrooms, or your favourites)
1/4 tsp salt
1/2 tsp black pepper
4 large eggs, beaten
1/4 cup whipping cream
1/4 cup milk
1 cup feta, drained and crumbled

Melt butter in a frying pan over medium-high heat. Add bacon and saute until bacon is somewhat crisp. Add veggies, salt and 1/4 tsp pepper. Turn heat to high and saute until onions begin to soften and take on colour, and excess liquid has evaporated. Remove bacon/veggie mixture from heat and drain if necessary. (You want a relatively dry mixture.) Whisk together eggs, cream, milk and remaining black pepper. Preheat your oven's broiler. Spray a clean, oven-safe frying pan with non-stick cooking spray and place over medium heat on the stovetop. When the pan is hot, add the egg mixture and use a rubber spatula to gently stir until it starts to look like wet scrambled eggs. Stop stirring at this point, to avoid gaps in the egg mixture. Reduce heat a little if you feel it's cooking too quickly. Once eggs are cooked about halfway through, remove from the heat. Evenly coat the top of the eggs with the veggie mixture, then sprinkle feta over top. Place the frying pan in the oven about 3" from the broiler and allow the eggs to finish cooking and the cheese to melt a little. Serve immediately. Yield: 2-4 servings
