Cheese & Grits
1 cup grits (actual grits, not cornmeal)
1/4 tsp salt
1/4 tsp celery salt
1/4 tsp black pepper
1/4 tsp garlic powder
8 oz block old cheddar, grated
1/4 cup whole milk
2 large eggs, beaten
1/4 cup butter
Preheat oven to 350 degrees Fahrenheit. Grease a baking dish with non-stick cooking spray. Bring the broth to a boil in a saucepan, then stir in the grits, salts, pepper and garlic powder with a whisk until well combined. Reduce heat and simmer until the mixture is thick, about 6-8 minutes. Add cheese and milk, and stir well. Carefully stir in the eggs and butter, whisking the entire time, so as to avoid curdling the eggs. Pour the grits into prepared baking dish and bake for 25-30 minutes, or until set. Yield: 4-6 servings.
