Wined Rabbit

Difficulty: easy Prep Time: More than 15 Minutes Total Time: More than 1 hour
2 - 3 lbs rabbit (jointed)
2 oz shortening
1 onion, studded with cloves
1 carrot, sliced
1 tsp sugar
1/2 lb tomato chutney
1/2 pint chicken stock
1 glass port wine
salt and pepper, to taste
milk for thickening
2 tbsp flour

Melt shortening and fry rabbit quickly on all sides; place in casserole. Add all remaining ingredients except flour and milk and cook at 350°F for 1 hour. Remove joints. Thicken sauce with flour blended with milk and serve over rabbit.
