Old-Fashioned Brandy Sauce

2 eggs, separated
1 cup icing sugar
3 tbsp brandy

Beat egg yolks until thickened and lemon-coloured. Add half the icing sugar, beating between additions. Beat egg whites until stiff, but not dry; fold egg whites into yolks and add brandy. Serve with your favourite Christmas pudding.
