Turbo Tacos

Difficulty: easy Prep Time: More than 15 Minutes Total Time: Under an hour
guacamole:
3 avocados, halved, seeded and peeled
1 lime, juiced
1/2 tsp salt
1/2 tsp ground cumin
1/2 tsp cayenne
1/2 medium onion, diced
2 tbsp chopped cilantro
1 clove garlic, minced
16 store bought tortillas
taco meat:
1 1/2 lbs lean ground beef
1 tbsp chili powder
2 cloves chopped garlic
1 small onion, chopped
1 tbsp crushed red pepper flakes
1 tbsp dried oregano
1 tbsp paprika
2 tbsp ground cumin
1 tsp sea salt (to taste)
1 tsp black pepper (to taste)
1/2 cup water

Add diced avocado to a bowl, followed by remaining ingredients for guacamole. Stir until mixed. Be careful not to over stir; avocado pieces should still be a bit chunky. Store in a lidded container. In a non-stick pan on high to medium-high heat, add a tortilla and cook for 1 minute, or until browning occurs, then flip with a spatula. Place finished tortillas in a bowl lined and covered with a moistened towel. In a large pan, on medium heat, brown the ground beef and drain remaining fat. Add remaining ingredients. For taco meat: Simmer until water has evaporated. Fill each taco with meat mixture, guacamole and optional toppings (eg. jalepenos, cheese, hot sauce), and serve.
