Smoked Salmon Penne
3 tbsp garlic, minced
3/4 cup shallots, minced
1/2 cup white wine
2 cups whipping cream
2 cups cold-smoked salmon, large dice
2 tbsp whole grain Dijon
3/4 cup Parmesan cheese, shredded
Salt & pepper to taste
4 cups cooked penne, kept hot
Melt butter over medium-high heat. Saute the garlic and shallots until translucent. Turn the heat to high, and once the pan sizzles, add the wine. Cook for one minute and add the cream. Allow it to boil until it reduces by one-third and thickens. Reduce the heat to medium. Add the salmon and Dijon, and cook until the salmon is just cooked through. Remove from heat and stir in the cheese. Season to taste with salt and pepper and add the pasta. Toss to coat. Yield: 2-4 servings
