Scallop Casserole
2 tbsp oil
1 large onion
1 green pepper
1 cup mushrooms, sliced
Salt and pepper to taste
1 cup frozen peas or mixed vegetables
1 lb scallops (uncooked)
1/2 cup bread crumbs
2 tbsp butter, melted
Cheese Sauce:
3 tbsp margarine or butter
3 tbsp. all-purpose white flour
1/4 tsp salt
1/4 tsp pepper
2 cups milk
1/2 cup cheddar cheese, grated
Wash scallops, pat dry and set aside. Sauté onions, green pepper and mushrooms in oil. Season with salt and pepper. Put cooked rice in the bottom of casserole dish. Cover with sautéed onions, green pepper and mushrooms. Add frozen peas or mixed vegetables. Add scallops. Spread with cheese sauce. Mix bread crumbs with melted butter and sprinkle over cheese sauce. Bake at 375° F for 20 minutes. Do not over bake.
Cheese Sauce: To make roux, melt butter, whisk in flour, salt and pepper. Gradually, whisk in milk and cook in microwave, stirring frequently, until sauce is desired consistency. Add grated cheese, stir until melted.
