Ritzy Rhubarb and Strawberry Cheese Cake

Difficulty: easy Prep Time: Fifteen Minutes Total Time: Under an hour

4 cups of chopped rhubarb
2/3 cup of honey
1 cup of sliced strawberries
Ritz crackers, crumbled
8 oz cream cheese
1/4 cup of carnation milk
1 pkg dream whip, prepared

To make the filling, cook in pan over low heat the rhubarb, strawberries and honey until rhubarb is tender. Cook an addition 5 minutes, then slightly mash the strawberries.Place the crackers in a 9 x 13 pan. Spread middle over crackers and top with filling.

For the middle, mix milk and cream cheese. Fold in prepared whip. Place in fridge for about 1/2 hour.

Serve with vanilla yogurt over it and a strawberry on top. Makes 8 delicious Newfoundland servings.
