Pork Chops and Rice
6 pork chops
1 medium onion, chopped
1/4 cup green pepper, chopped
1 cup uncooked rice
1/2 tsp salt
1/4 tsp pepper
2 cups beef broth
1 tbsp Worchestershire Sauce
2 tomatoes, sliced
Heat oil in skillet; brown pork chops. Place 3 pork chops in bottom of a 2-quart, oven-proof casserole dish. Sauté onion and green pepper in pork chop drippings. Place rice on top of pork chops in casserole. Place onion and green pepper on top of rice. Sprinkle with salt and pepper. Cover with remaining 3 pork chops. Combine beef broth with Worchestershire Sauce. Pour over pork chops and rice. Place tomatoes on top. Bake covered at 350°F for 1 hour.
