Partridgeberry Muffins (With Variations)

Difficulty: easy Prep Time: Ten Minutes Total Time: Under an hour
2 1/4 cups all-purpose flour
2 1/2 tsp baking powder
3/4 cup granulated white sugar
1/4 tsp salt
1 egg
1 cup orange juice
1/3 cup melted butter
1 tsp almond flavouring
1 cup partridgeberries, fresh or frozen (If frozen, do not thaw)

Blueberry Muffins:
1 tbsp pure lemon juice
1 tbsp pineapple juice

Topping for Apple Muffins:
1/4 cup brown sugar
1/4 cup chopped nuts
1/2 tsp cinnamon

Mix dry ingredients in large bowl. Separately beat egg in orange juice, add flavouring. Make well in dry ingredients, add egg/orange juice and flavouring. Add melted butter and berries. Minimal mixing. Bake at 350°F about 15 minutes. Test to see if baked, if not, continue baking, checking at 5-minute intervals. Becazuse they are quite moist when put in muffin pan, I find these take a little longer to bake.

Blueberry Muffins:
To enhance flavour, add 1 tbsp (15 ml) pure lemon juice and 1 tbsp (15 ml) pineapple juice.

Topping for Apple Muffins:
Sprinkle topping over muffins before baking.
