Partridge in Marinade

partridge
olive oil (as required)
salt (to taste)
white pepper (to taste)
1 cup white wine (or as required)
thyme (to taste)
marjoram (to taste)
sweet basil (to taste)
parsley (to taste)
2 cloves garlic

Divide bird into 4 pieces. Slightly brown in olive oil in an iron pan. Season with salt and pepper. Cover with equal parts of white wine and water. Add chopped garlic and herbs to taste. Bring to boil and simmer until partridge is tender.
