Old-Fashioned Potato Soup

6 potatoes, peeled and diced
6 onions, sliced thinly
6 stalks celery, chopped
4 cups boiling water
2 tbsp butter
2 tbsp all-purpose flour
4 cups milk, scalded
Salt and pepper to taste
6 slices bacon (fried crisp and crumbled)
Paprika, parsley & chives to garnish

Cover potatoes, onion and celery with boiling water. Boil until soft. Remove vegetables but retain the water. Force vegetables through sieve or puree in food processor or blender. Make white sauce in a small heavy saucepan over moderate heat: melt butter, whisk in flour and the water retained from cooking vegetables. Stir constantly until thickened and smooth, about 3 minutes. Stir in mashed vegetables. Add milk, salt and pepper to taste. Stir frequently and heat slowly. DO NOT BOIL. Just before serving, stir in crumpled bacon. Garnish each individual portion with paprika, parsley and chives and float a little butter on top.
