Maple-Butternut Squash Soup

2 tbsp extra virgin olive oil
8 cups butternut squash, diced
2 cups onion, diced
1 cup celery, diced
1 cup carrot, diced
3 tbsp fresh garlic, minced
3.75L (1 gal) chicken/vegetable stock
3/4 cup maple syrup
Salt & pepper, to taste

Heat oil over medium heat. Sweat squash, onion, celery, carrot and garlic until onion is translucent. Add stock and simmer until the squash is tender. Remove from heat and, using an immersion blender (or in batches in a regular blender), puree the soup thoroughly. Add the maple syrup and season to taste.
Yield: 15-20 servings
