Lobster Casserole
3 tbsp all-purpose flour
3⁄4 tsp dry mustard
1 tsp salt
1⁄2 tsp pepper
1 cup milk
1 cup light cream
3 cups mushrooms, sliced
1⁄4 cup Swiss cheese, shredded
3 cups cooked lobster meat, diced
2 cups soft bread cubes
1⁄2 cup fine dry bread crumbs
2 tbsp butter, melted
Preheat oven to 350°F and lightly grease a casserole dish. Melt butter in a saucepan over medium heat. Stir in flour, mustard powder, salt and pepper until smooth. Pour in milk and cream, bring to a simmer and cook, stirring constantly, until thickened and smooth. Add mushrooms and cheese, stirring until cheese has melted. Fold in diced lobster meat and bread cubes. Pour into prepared casserole dish. Mix bread crumbs with melted butter to moisten. Sprinkle crumbs over casserole. Bake for 30 min., or until crumbs have browned and casserole is heated through.
