Lemon Shrimp
1 tsp lemon zest
1 clove garlic, minced
1 shallot, thinly sliced
1/4 tsp ground black pepper
1/8 tsp paprika
2 tbsp lemon juice
1/8 tsp celery salt
1/8 tsp salt
1/4 tsp cumin
1 tbsp extra virgin olive oil
Preheat the BBQ on high. Mix everything, except the shrimp, together in a bowl. Tear off a piece of aluminum foil about 18 inch long. Fold it in half so that it's 9 inch long. Arrange the shrimp on the foil and pull up the sides to create a little "dish." Pour in the mixture and fold together all the foil edges to seal the packet. Place it on the BBQ and allow it to heat all the way through. It should take about 10 minutes. Check it and cook further, if necessary. Serve immediately in its juices with your favourite side dish. Yield: 1-2 servings
