Layered Cabbage & Apple Salad
1 (17oz) can green peas, drained
1 (8oz) can water chestnuts, drained
1/4 cup onion, chopped
3/4 cup celery, chopped
1 large red apple, unpeeled, cored and chopped
1/4 tsp salt
1/2 cup sour cream
1/2 cup mayonnaise or salad dressing
1 tsp sugar
1 cup cheddar cheese, shredded
1 cup pecans, finely chopped
Early in the day, or night before, combine cabbage, peas, water chestnuts, onion, celery, apple and salt in a large bowl. Combine sour cream, mayonnaise and sugar; stir until blended. Spread sour cream mixture over cabbage mixture, covering to edge of bowl. Layer cheese and pecans on top. Cover salad; chill 8 hours. Toss before serving. For maximum effect, serve this pretty salad in a clear glass bowl to show off the colourful layers. Serves 8 - 10.
