Irish Soda Bread
1/3 cup white sugar
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1 egg
1 cup buttermilk
Preheat oven to 350°F and line a cookie sheet with parchment paper. Sift together all the dry ingredients. Beat egg and buttermilk together and add to dry ingredients with the butter. Mix together and knead until smooth. Form into a ball and cut a deep X in the loaf with a sharp knife. Bake for 40-50 minutes, checking with a toothpick after about 30 min. If it comes out clean and the loaf sounds hollow when knocked on, it’s done. Makes 1 loaf.
