Homemade Marshmallows
1/2 cup cold water or fruit juice
2 cups white sugar
2/3 cup corn syrup
1/4 cup water
1/4 tsp salt
1 tbsp vanilla (or your favourite flavouring)
Icing sugar for dredging
In the bowl of an electric mixer, sprinkle gelatin over water/juice. Soak for 10 minutes. In a saucepan, combine sugar, corn syrup and 1/4 cup water; bring to a boil. Boil hard for one minute. Pour syrup mixture into gelatin and mix at high speed. Once gelatin is dissolved, add salt and vanilla. Continue to mix on high until it thickens, cools a little and becomes very sticky. Scrape into a 9”x9” pan lined with plastic wrap lightly greased with cooking oil. Lightly spray top of mixture with cooking spray. Lay another piece of plastic wrap on top and press down evenly. Let the mixture sit for a few hours. Cut into chunks with a pair of scissors or a chef’s knife. Dredge each piece in icing sugar, shake off excess and serve.
