Ham and Potato Salad

Difficulty: easy Prep Time: Fifteen Minutes Total Time: More than 1 hour
4 cups cooked potatoes, diced
2 tbsp onion, finely chopped
1/2 tsp salt
1/8 tsp pepper
1/2 cup celery, chopped
1/4 cup French dressing
2 hard-boiled eggs, chopped
1/4 cup green pickle relish
1 tbsp parsley
1 1/2 cups cooked ham, chopped
3/4 cup mayonnaise

Combine potato, onion, salt and pepper and celery in large bowl.
Toss together gently and add French dressing. Cover and chill for about 2 hours. Before serving, add relish,eggs, parsley and ham. Toss lightly. Fold in mayonnaise and serve.
