Partridgeberry Glazed Pork Loin
1/2 cup Pure Labrador Lingonberry (Partridgeberry) Glaze
Salt and pepper
Lingonberry (Partridgeberry) Glaze:
6 tbsp Pure Labrador Lingonberry (Partridgeberry) Syrup
1 1/2 tsp salt
1 1/2 tsp black pepper
1 clove garlic, minced finely
2 tsp gingerroot, peeled and finely grated
1/4 tsp tomato puree
2 tsp Dijon mustard
4 tsp fresh lemon juice
Lingonberry (Partridgeberry) Glaze: Blend together all ingredients. Yield: 1/2 cup. Marinate pork loin with half of glaze overnight. Preheat oven to 375°F. Season pork loin with salt and pepper and sear roast in hot frying pan. Place pork loin in roasting pan and brush with remaining glaze. Place in preheated oven and bake until internal temperature reaches 145°F, approx. 45 -50 minutes, basting often with pan juices. Remove from oven. Keep warm and let rest 20 minutes before carving. Serve with Pure Labrador Lingonberry (Partridgeberry) Spread. Makes 6 to 8 servings.
