Glazed Salmon & Turkish Pilaf
3/4 cup soya sauce
1 tsp dried ginger
2 tbsp honey
1 cup long grain rice
2 tbsp butter
1/4 cup onion, diced
1/4 cup raisins
1/4 cup green peas, frozen
1 tomato, diced
2-3 cups chicken stock
Mix soya sauce, ginger and honey well to create a glaze for the salmon. Cover hot grill with tinfoil; place salmon on foil and brush with glaze. After 3-4 minutes, flip steaks and glaze other side. When salmon is nearly cooked, transfer to a pan in the oven (brush with more glaze) to finish cooking, about 5 minutes. Pilaf: Sauté rice in butter until it starts to soften slightly, add onions, raisins, peas and tomato. When vegetables are tender, add stock and cool for about 5 minutes. Cover and finish in the oven. Rice is done when all the liquid is absorbed and the rice is tender.
