Eggcellent Sandwich

1 tsp olive oil
1/4 sliced red pepper, diced
1 mushroom, diced
1 egg
2 slices whole grain bread
1 tsp mayonnaise
1/2 tsp yellow mustard
Dash hot sauce (optional)
1 leaf of Romaine lettuce, or some spinach
1/4 cup mozzarella cheese (optional)
Edamame Side
1/2 tsp olive oil
1/2 cup edamame beans
Pinch of salt and pepper
1/4 sliced red pepper, diced
1 mushroom, diced

Edamame Side
1/2 tsp olive oil
1/2 cup edamame beans
Pinch of salt and pepper
Sandwich: Heat oil in a frying pan; sauté peppers and mushrooms for 5-7 minutes. Remove veggies from pan and set aside. Fry egg. Toast bread and top with mayonnaise, mustard and hot sauce (if desired). Layer with lettuce/spinach, cheese (optional), mushrooms, peppers and egg.
Edamame side: Heat oil in a frying pan over medium heat; add beans and cook for 5-10 minutes until they reach desired tenderness. Add a pinch of salt and pepper.
