Crystal’s Nice and Spicy Chicken
1 (14oz) tin pineapple chunks
1 bottle barbecue sauce
Strain juice from pineapple and reserve fruit. Mix juice and barbeque sauce together. Spray non-stick skillet with cooking spray and heat on high. Brown chicken 3-5 minutes per side and add pineapple juice mixture. Lower heat to medium and cook uncovered, turning chicken once during cooking. When sauce thickens, about 20-30 minutes, check chicken for doneness. Add pineapple chunks and heat through 3-5 minutes. Serve over a bed of rice. Note: May substitute sliced peaches for pineapple chunks.
