Cranberry Sauce

2 1⁄2 cups fresh local whole cranberries
2 tbsp fresh local honey
2 tbsp dark rum
1 tsp ground ginger
2 tbsp fresh local honey

Place all ingredients in a heavy bottomed sauce pan and bring to a boil, stirring continuously. Reduce heat and let simmer for 10 min. Remove from heat and blend with a hand blender for smooth sauce, or serve as is for a berry sauce. Serve as a condiment with fresh local turkey, pork, or wild game. Note: This sauce is very thick. It can be thinned with grape juice. It can also be sweetened by adding more honey or sugar.
