Cheddar Cheese Crackers
2 cups cheddar cheese, shredded
1/2 cup butter (room temperature)
1/2 tsp salt
1/4 tsp ground cayenne pepper, or to taste
Preheat oven to 325°F. Line a baking sheet with parchment paper. Place flour, cheese, butter, salt and cayenne pepper in a mixing bowl; blend well. Scrape mixture out onto a well-floured work surface and gather into a ball. Roll the dough to 1/8-inch thickness. If dough is too sticky, refrigerate for about 15 minutes, then roll out. Cut into shapes with a biscuit or cookie cutter. Gently lay crackers onto parchment paper. Bake until crackers start to turn golden brown at the edges, 15-20 minutes. Cool on the sheet for about 10 minutes before removing to finish cooling on racks.
