Carrot Marmalade

15 cups peeled and chopped carrots, about 4 lb.

7 lemons, chopped, peel and all

7 oranges, chopped, peel and all

1 28 oz. can crushed pineapple

12 cups sugar

Finely grind carrots and fruits in a food processor or grinder. Put into a large kettle and cover with sugar; let stand overnight. Boil briskly for 15 minutes. Pour into hot sterilized jars.
A friend adds that this makes "lots;" add a bow and a gift is ready to share.
