Calf’s Liver and Bacon

1 lb calf’s liver
salt and pepper, to taste
flour
1/2 lb bacon (and drippings)
salt and pepper, to taste
flour
1/2 lb bacon (and drippings)
Cut liver in 1/2-inch thick slices. Pour boiling water over, let it stand 5 minutes and drain. Sprinkle with salt and pepper and dredge with flour. Cook slowly in hot drippings or bacon fat. Serve with crisp bacon.
