Bread Pudding
6-8 slices day-old bread
3/4 cup raisins
4 eggs, beaten
2 cups milk
1/2 cup white sugar
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
3/4 tsp vanilla extract
Preheat oven to 350°F. Grease an 8” square baking dish with melted butter. Cut 6 slices of bread into cubes and place in a bowl with raisins. In another bowl, beat together remaining ingredients. Pour mixture over bread and gently mix the bread around so that it soaks up the liquid. If there is still a lot of liquid left in the bowl after about 5 minutes, add a little more bread so that most of the liquid is absorbed and the bread is nice and wet. Bake at 350°F for about 45 minutes, or until the top springs back when lightly poked. Yields 9-12 servings.
