Bologna and Potatoes with Gravy
1 small onion, sliced
1/4 cup butter
2 tbsp flour
2 cup beef bouillon/water
2 small potatoes, boiled or baked
Salt & pepper
Melt half the butter in a heavy bottomed frying pan and fry your bologna in it. The bologna should have a crust on both sides. Remove it from the pan and set aside.
Add remaining butter to the pan and fry the onions until golden brown. Add flour to the pan and cook until flour starts to brown a little. Add the liquid and stir until there are no lumps and the gravy is thickened. Return bologna to the pan and season to taste with salt and pepper. Serve with boiled/baked potatoes.
Yield: 2-4 servings
