Biscuits
1/2 cup sugar
1/4 cup buttermilk powder
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
3/4 cup raisins
1 tbsp orange zest
1 cup shortening
7 oz cold water
Aluminum foil
Mix all dry ingredients together and cut in the shortening until it resembles coarse cornmeal. Store in a resealable plastic bag for transport.
To Prepare: Mix the contents of the bag with the water and combine until it's evenly wet and just starting to hold together. Do not over mix. Divide the dough into 12 buns and place them in a lightly greased pan (preferably a cast iron frying pan) and tent with foil. Nestle the pan deep into the fire to try and create an "oven effect." Cook for about 15-20 minutes. Serve hot with butter.
Yield: 12 biscuits
