Bahamian Chicken Soup

1 large chicken, cut in pieces
1 onion, sliced
1 stalk celery, chopped
1/2 cup lime juice
2-3 cups water
3 potatoes, peeled and sliced
2 carrots, peeled and sliced
2 bay leaves
hot sauce or peppers, to taste
salt and pepper, to taste
3-4 whole allspice
fresh lime, sliced (to garnish)
hot peppers, diced (to garnish)

Remove any excess fat from chicken. Place all ingredients in pot, cover with water. Bring to a boil and cook over medium heat for 45 minutes or until chicken is cooked. Serve a garnish of fresh lime and diced hot peppers on the side for guests to add to the souse (another name for soup).
