Bacon-Wrapped, Stuffed Dates

12 medjool (large) dates, pitted
12 strips smoked bacon (try maple bacon for added flavour)
24 whole almonds

Remove pits from dates and fill hole with two whole almonds. Press the date back together and reshape. Wrap each date in bacon and pin with a toothpick. Place on broiling pan and bake at 350°F for 15-20 minutes, or until bacon starts to crisp and sizzle. Let stand for 5 minutes and remove the toothpicks. Serve warm. Yields 4 servings.
