Bacon Wrapped Stuffed Dates
1 spicy sausage/pepperoni, cut in 1" pieces & quartered
12 slices bacon, cut in half
Vegetable oil, for frying
Dip:
1 cup mayonnaise
2 tbsp whole grain mustard
Coating:
1 cup flour
3 eggs
1/2 cup milk
1 1/2 cups cornmeal
Remove pit from date, and replace with a piece of sausage /pepperoni. Form the date around the meat. Wrap with bacon and secure with a toothpick. Mix the dip ingredients together and set aside in the fridge. For the coating: Put the flour in one bowl, mix the eggs and milk in another, and put the cornmeal in a third. Dust the dates in flour, shake off excess, dip in the egg mixture and then in cornmeal to coat fully. Fry dates in a small amount of vegetable oil over medium-high heat until golden brown. Drain on paper towels and serve with dip. Or, for a healthier alternative, these can also be baked at 350F for 20-30 minutes (depending on how crispy you like your bacon). Yield: 24
